It is based on a recipe I found in Cook's Illustrated, with only minor tweaks. -kyle --- Pork Chop Express ----------------- 3.5lb boneless pork ribs (pork butt/shoulder), cut in to 1-2" chunks 6-8 slices bacon, chopped up 1 onion, finely chopped 6-7 cloves garlic, finely chopped 6 serrano peppers, finely chopped (seeds and all) 1 tablespoon cumin 4 tablespoons chili powder, (I used powdered hot red chilis) 1-2 tablespoon concentrated tomato paste 1 1/2 tsp oregano 2 bay leaves 1 28oz can of good whole peeled tomatoes, blended quickly with stick blender 3 cups water 2 cans kidney beans, rinsed/drained 1) mise en place!! - finely chop: onion, garlic, serranos - collect dry stuff together (cumin, chili powder, bay leaves, oregano). - now, chop pork up into nice chunks, salt/pepper - chop up bacon 2) cookin' it up!! - start up big dutch oven or soup pot on med and get bacon rendered down.... (pour off excess fat if there's a lot) - set aside bacon on big plate - med-high, sear the meat in the pot, in batches, so it doesn't get crowded. as you remove it, collect it with the bacon on the plate. if needed, add a bit of the poured off bacon fat for each new batch... - throw in onion, garlic, serrano; season w/ a little salt, let sweat a couple minutes. - now add the dry (cumin, chili powder, bay leaves, oregano) and tomato paste and let cook with the veggies a bit... get nice and dark and yummy.... - add the water, deglaze, scrape up all the bits... - next, add meat/bacon and tomatoes to pot. - bring to slow simmer, cook for 2-3 hours (depending on size of meat chunks), stirring occasionally. - when meat is close to where you want it, add the beans, cook another 1/2 hour 3) eat up!
